Sake Pairing [March 1 - May 31, 2024].

When mid-February arrives, "kurabiraki" is held at sake breweries in Fushimi to celebrate the completion of new sake brewed during the winter using the previous year's new rice.
Chorakukan FRENCH LE CHENE invites you to experience a seasonal French pairing of freshly squeezed nigori sake from the Fujioka Sake Brewery in Fushimi, Kyoto, and kijo sake from the Shirasugi Sake Brewery in Tango, Kyoto, with the breath of spring.
The taste of Kyoto's local sake will enhance the flavor of FRENCH LE CHENE's cuisine and provide a special moment that will remind you of the arrival of spring.

Sake Pairing

Nigori Sake Aozora Junmai Sake

  • White sake with a slight leesiness. It is a beautiful drinking sake.
    The slight sweetness typical of rice underpins and envelopes the flavor of the seasonal fish in this pairing.
    The youthful fruity aroma will be enjoyed in a glass of wine.

  • Fujioka Sake Brewery, Fushimi, Kyoto, Japan
    Fujioka Sake Brewery was established in 1902 by Eitaro Fujioka, the founder of the company, in Higashiyama-ku, Kyoto.
    The Fujioka Sake Brewery moved to Fushimi in 1918, and once boasted a production of 8,000 goku of sake, but the sudden death of the third-generation brewer brought the curtain down on the history of the Fujioka Sake Brewery in 1995.
    Seven years later, Masaaki Fujioka, the fifth-generation brewer, became the chief brewer and attempted to revive the brewery, which he successfully did.
    Since then, all the sake produced by Fujioka Shuzo has been handmade pure rice sake.
    Because it is produced in small quantities, it cannot keep up with demand and is called "phantom sake" by some.

Kijoshu BLACK SWAN II THE DARK PHOENIX

  • Kijoshu was newly created in 1973 with the aim of making sake "suitable for entertaining state guests.
    It is a uniquely made sake that uses sake instead of water when brewing, and is characterized by its unique thickening and elegant sweetness, similar to that of noble rot wine.
    BLACK SWAN II uses BLACK SWAN, a sweet and sour Japanese sake made from Tango-produced Milky Queen and black malted rice by Shirasugi Shuzo, instead of brewing water,
    The taste is a fusion of intense sweetness and acidity.
    Although the pairing of fromage and noble rot wine is a pairing that has many fans,
    FRENCH LE CHENE will pair the fromage with Kyoto's kijo sake to enjoy its compatibility.

  • ■Kyotango Shirasugi Sake Brewery Co.
  • Shirasugi Shuzo has been brewing sake in Kyotango City since 1777.
    This brewery is the brewer of Shirakiku, a local sake from Tango, Kyoto.
    With the philosophy of "good rice makes good sake", we do not use rice for sake brewing, but rice for sake brewing.
    We make sake using only edible rice, which Japanese people usually eat.
